Ingredients

1-14 cup cornmeal

3/4 cup soy flour

2 to 4 tbsp sugar

4 tsp baking powder

1/2 tsp salt

1 cup milk

1 or 2 eggs

1/4 cup vegetable oil

Preparation

Preheat oven to 425 degrees.

In a large bowl, mix dry ingredients together. Add milk, egg & oil, beat until smooth (about 1 minute). Bake in a greased 8"x8" baking pan 20-23 minutes, until a wooden pick inserted in the center comes out clean.
