Ingredients
1 cup all purpose flour
1 cup quick-cooking oatmeal (uncooked)
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinimon
1/4 tsp ginger
1/4 tsp nutmeg
1/2 salt
1 egg, lightly beaten
1/4 cup milk
1 tsp vanilla
2 tsps coconut oil
2/3 cup grated apple (or sugar free apple sauce)
1/4 cup combo of honey &/or maple syrup
1 tsp of molasses
1 zucchini grated
2 carrots grated
3-4 tbsp of chopped walnuts
3-4 tbsp of chopped dates, raisons or other dried fruit
2-3 tbsp of chopped unsweetened coconut
2-3 tbsp of ground flaxseeds
Preparation
Preheat oven to 350 degrees. Prepare muffin pan (grease or line with paper muffin liners.
In big bowl, mix dry ingredients well (1st 8)
In separate bowl, mix egg, milk, vanilla, coconut oil, honey/maple syrup, molasses, grated apple, zucchini and carrot.
Mix wet ingredients in w/dry, then add remaining nuts, coconut, flaxseeds and dried fruit.
Bake for 23-25 minutes.
