Ingredients
1 - 1 1/2lb shrimp
2 cloves garlic coursely chopped
Salt, Pepper, & fresh parsley
Baby Arugala
1 Large Cucumber seeded and diced
Cherry Tomatos (halved)
Mixture of Greek Olives for Garnish
For vinaigrette:
1 c. Fresh Crumbled Feta Cheese
1/2 c. Extra Virgin Olive Oil + 2 TBS
1/2 c. Balsamic Vinegar
1 T. Dijon Mustard
Juice of 1 lemon
1 T Granulated Sugar
Preparation
Stir together chopped garlic, shrimp, 2TBS Olive Oil and fresh Parsley - place on skewers and grill (blackening ‘slightly’), mix together ingredients for vinaigrette, place salad ingredients in large bowl, toss lightly with the vinaigrette, Place salad in center of large server plate/platter ~ garnish with olives around edges of plate (drizzle balsamic vinegar about olives for added beauty. Place Grilled shrimp both on salad and with olives at edges! beautiful and delicious!
