Ingredients

4 # yams, peeled and cubed

2/3 c light brown sugar

5 tbsp butter

1 tsp cinnamon

1/2 tsp salt

1/4 tsp nutmeg

2 c mini marshmellows

1/2 sliced almonds

pinch of ginger

Preparation

Preheat to 375. Arrange potatoes in glass baking dish. Combine sugar, butter, and spices in saucepan and bring to a boil over medium heat, stirring until sugar dissolves. Toss potatoes in sauce and cover with foil. Bake 50 min, uncover and bake 20 min more. Increase oven to 500 and top with marshmellows. Bake 3-5 min until marshmellows just begin to melt.
