Ingredients

1 lb. Pork tenderloin, trimmed

1 Tbsp all-purpose flour

2 Tbsp brown sugar, divided

1/2 tsp. Salt

1/2 tsp. GR. Cumin

1/4 tsp. GR. Cardamon

1/8 tsp. Gr. Red pepper

1/4 c. Raisins

1/4 c. Orange juice

3 tbsp balsamic vinegar

2 tbsp. Capers

1 tbsp olive oil

Preparation

  1. Cut pork crosswise into 16 pieces
  2. Combine flour, 1 tbsp br. Sugar, salt, cumin, cardamom, and red Oerter. Rub evenly over pork.
  3. Combine 1 tbsp sugar, raisins, juice, vinegar, and capers, stirring until sugar dissolves.
  4. Heat oil in large non-stick skillet over med-high heat. Add pork, cook 2 min. Turn pork and cook 1 min. Add vinegar mixture, cook 1 min. Or til thickened and pork is done
