Ingredients

2 lbs pearl onions

1 cup sherry

1/2 cup raisins

1/4 cup honey

1/4 water

1/4 stick butter

1 tsp minced thyme

2/3 cup toasted almonds

1 tlb sherry/red wine vinegar

Preparation

Boil onions 3 min in order to slip out of skins. Combine onions with all ingredients except almonds and vinegar. Bring to boil then simmer, covered, about an hour, until carmelized. Stir often. Remove from heat. When ready to serve reheat and add almonds and vinegar. Add a little water if too thick.
