Ingredients

Dried shrimp without shells (1 large handful, loosely minced)

5 large shiitake mushrooms

Glass noodles (3 store-sold bundles)

Fish sauce 5 tsps

Soy sauce 1 tbsp

Sesame oil 2 tbsp

Lemon extract (1/2 tsp)

Green cabbage (10 outer leaves)

Preparation

  • Soak the shrimp and noodles in cold water for about 1 hour prior to use.
  • Mince shrimp and mushrooms
  • Heat sesame oil in stir fry pan on medium heat
  • Stir fry shrimp and mushrooms, adding soy sauce to taste, and if needed, salt. About 5 minutes. Put aside and sieve out liquids.
  • Put glass noodles in boiling water. Remove from heat after 5 minutes of boiling. Sieve out extra liquid.
  • Divide out glass noodles in cabbage leaves, top with shrimp and mushroom on bed of noodles.
  • Mix fish sauce with lemon extract
  • Spoon ~1/2 tsp of fish sauce mixture over each portion.
  • Wrap up cabbage in rolls, keep in place with toothpick.
