Ingredients
8 medium sweet potatoes
2 tbsp butter, plus 4 tbsp
1 cup chopped onions (1 medium onion)
1 tbsp graded fresh ginger
Preparation
Preheat oven to 400F.
Place whole potatos on baking sheet. Bake potatos in middle of oven for about 1 hour or until tender when pierced with a fork.
Meanwhile, in a saute plan melt butter and saute onions with ginger until onions are translucednt. Set aside, Remove potatoes from oven and scoop out flesh (or peel skin off). Place into a food processor with butter and onion, pureeing in batches if necessary. Season with salt and pepper.
