Ingredients

1 1⁄2 cups diagonally-cut carrots

1⁄3 cup ginger ale

1⁄4 tsp. ground coriander

1⁄8 tsp. kosher salt

Dash of ground black pepper

Preparation

Place carrots and ginger ale in a skillet over high heat. Bring ginger ale to a boil; cover skillet. Reduce heat to low; simmer carrots for 5 minutes.

Uncover skillet; return liquid to a boil. Add coriander, salt, and pepper. Cook mixture until liquid evaporates, about 5 minutes.
