Ingredients
2 cups flour
1 1/2 tsp baking soda
1 tsp salt
1 1/2 tsp cinnamon
1 1/2 tsp ground ginger
1 tsp nutmeg
1/2 tsp ground cloves
1/4 cup dark brown sugar
2 cups buttermilk
2 eggs (room temperature), beaten
1/4 black coffee (cooled)
5 T melted butter
Preparation
Mix dry ingredients. Stir together buttermilk, eggs and coffee. Add to dry ingredients and fold until just barely blended. Gently stir in melted butter. Cook on a lightly greased griddle over medium low heat, flipping when the edges begin to harden.
