Ingredients
1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1 teaspoon ginger
1/4 cup dark brown sugar
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon cocoa powder
dash cloves
2/3 cup skim milk
3 tablespoons molasses
1 tablespoons vegetable oil or melted butter
1 egg, lightly beaten
1 tablespoon lemon juice
1/2 cup water, if needed
Preparation
Combine all the dry ingredients and stir until evenly mixed. Combine all the wet ingredients in another bowl and stir. Gently mix the wet ingredients into the dry, stirring until smooth.
Use ~1/4 cup of batter for each pancake.
