Ingredients
12 ounces raw turkey breast, sliced
1 tsp ginger, peeled & finely minced
Cracked black pepper to taste
1/2 Granny Smith apple, peeled, cored & sliced into thin strips
8 cherry tomatoes, quartered
2 ounces red onions, peeled & sliced
1 scallion, slivered
1 ounce cilantro leaves, picked
2 whole-wheat pita breads
Balsamic Lime Jicama Dressing:
1 Tbsp balsamic vinegar
2 ounces non-fat plain yogurt (organic if possible)
Juice of 1 lime
2 ounces jicama, peeled & minced
Preparation
Balsamic Lime Jicama Dressing: Add all ingredients to a bowl and whisk until evenly mixed.
Ginger Turkey Gyro:
- Season turkey breast with cracked pepper and rub ginger into the slices.
- Sear until golden brown on both sides, making sure it is fully cooked through.
- Heat pita bread until warm - spread Balsamic Lime Jicama Dressing on pita breads.
- Top dressing with seared turkey, apples, red onions, cherry tomatoes, scallions and cilantro. Top with additional dressing, fold and enjoy!
