Ingredients
2 sticks unsalted butter
1 c. brown sugar
1 large egg
1 T. vanilla extract
2 cups all purpose flour
1 cup oatmeal
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cloves
Preparation
Cream butter and sugar until fluffy in electric mixer. Beat in egg, scraping bowl, until well combined. Beat in vanilla. Beat in remaining ingredients, scraping bowl, until well mixed. Divide dough in half and shape each half into a cylinder about 2 inches in diameter. Wrap in plastic wrap and then place into freezer bag and refrigerate or freeze until firm enough to slice, about 30-45 minutes. (or longer for future use) Preheat oven to 350. Slice cookies about 1/2 inch thick and set about 1 inch apart on parchment lined baking sheets. Bake for 10-12 minutes. Cool cookies on cooling racks and store in airtight container.
