Ingredients

1 C grown rice flour

1 C rye flour (or gluten free flour)

1 t baking soda

1 t baking powder

1 t ground ginger

1 t cinnamon

1/4 t ground cloves

1/4 t salt

1/2 C coconut oil, warmed to a liquid consistency

1/4 C maple syrup

1/4 C honey

1 egg

2 C old-fashioned oats

Preparation

  1. Sift together the first 8 ingredients and set aside.
  2. In an electric mixer on low speed: mix the oil, syrup, honey and egg until smooth.
  3. With mixer running, gradually add the dry ingredients (except oats) to the wet.
  4. Using a spatula, gradually fold in the oats.
  5. Spoon onto oiled baking sheet. 7. Bake for 8 minutes or until lightly golden.
