Ingredients

1 apple

1 large pumpkin quarter

1/4 onion

2 nubs ginger

1 litre chicken stock

2 carrots

water if needed (1 cup or so)

Preparation

Cut pumpkin into cubes, same for carrot, and onion and (optional) apple.

Sauté onion and carrot until soft. Add pumpkin and apple and small chunks of ginger (little). Cover with chicken stock and a little water.

Bring to a boil, reduce heat and let simmer until pumpkin is soft. Purée until smooth.
