Ingredients
1 ¼ lb carrots, julienned or grated;
½ cup shredded almonds
2 tbs cilantro leaves, minced
½ cup dried raisins
2 inch piece of daikon minced
zest of 1 orange (finely grated)
For the sauce:
1 ½ inch piece of ginger, grated
5 tbs lemon juice
2 ½ tbs sugar
2 tbs Vietnamese fish sauce (nuoc mam)
Preparation
Toss the shredded carrots, raisins, almonds, cilantro, orange zest and shredded daikon with the sauce.
