Ingredients

4 salmon portions

4 teaspoons minced fresh peeled ginger

2 teaspoons curry powder

2 tablespoons of olive oil

4 scallions chopped

Preparation

  1. Stir ginger and curry together
  2. Coat salmon in ginger curry mixture
  3. Heat oil in a skillet over medium heat, then cook salmon covered for 8 - 10 minutes
  4. Add scallions to skillet with salmon and cook 1 more minute.
