Ingredients
2 cups gingerbread graham cracker crumbs
2 tablespoons melted butter
1/3 cup sugar
12 ounces fresh cranberries
2 tablespoons fresh chopped ginger root
1 cup sugar
1 cup water
3 peeled, cored and diced granny smith apples
3 8 ounce packages cream cheese (room temperature)
1 cup sugar
2 tablespoons flour
1 teaspoon vanilla
Preparation
Preheat oven to 375 degrees. Place graham crackers, butter and sugar in food processor until well combined. Press into bottom of 9 inch springform pan and cook for 10 minutes.
Place cranberries, ginger, sugar and water into sauce pan. Bring to a boil stirring occasionally.
Place cream cheese, sugar, flour and vanilla in blender and mix until smooth. Add apples and stir in by hand. Using a slotted spoon add cranberries to mixture and stir until combined. Pour over prepared crust. Bake for 40-45 minutes or until center is just set. Cool completely and keep refrigerated.
