Ingredients
1 1/2 sticks Butter
1 C. packed dark brown sugar
1/4 C. molasses
1 Egg
2 1/4 C. unbleached all-purpose flour
2 t. ground ginger
2 t. baking soda
2 T. finely chopped fresh ginger root
1/2 C. finely chopped crystallized ginger
Granulated Sugar/Raw Sugar or Dusting Sugar (all work well raw sugar looks best)
Preparation
- Cream butter and brown sugar. Beat in mollasses and egg.
- Combine flour, ground ginger, baking soda together. Mix into butter mixture until well blended. Mix in fresh and crystallized ginger. 3.Refrigerate dough for 1 hour.
- Preheat oven to 325*F
- Shape dough into 1" balls and roll in granulated sugar. Bake about 10-12 minutes or until the surfaces crack slightly (less time if you like your ginger cookies chewy).
