Ingredients
1 Tbsp peanut oil
1 small onion sliced
1 Tbsp fresh ground ginger
1/2 Tbsp garam masala
1 Tbsp soy sauce (add more for taste)
15oz can Chick Peas
15oz can diced tomatoes
3 Tbsp tomato paste
1/3 cup golden raisins
1 cup brown rice
Preparation
Heat peanut oil and onions in skillet for a minute or so. Add ginger to onions and cook for another 15 to 30 seconds, coating the onions. Add chick peas, diced tomatoes, tomato paste, soy sauce, garam masala. Cook uncovered on low-med heat for 45 minutes. Add golden raisins to skillet 5 minutes before finished. Serve over rice.
