Ingredients
1 Large yellow squash
1 large zuchinni squash
1 medium eggplant
1/4 cup olive oil
1 teaspoon sea salt
1 Tablespoon rosemary (preferbly fresh)
1 tablespoon basil
1 tablespoon white pepper
8 cups mixed salad greens
1 roasted red bell pepper
1 1/2 teaspoon of dill
1 teaspoon garlic
1/2 Cup Balsamic vinegar
1 cup chopped green onion
1 1/2 cups feta cheese
1 cups diced tomatos
Preparation
Trim tops and bottoms off squash, zuchinni,and eggplant. Slice all vegtables lengthwise and place on your grill and base will olive oil until tender.Once vegtables are tender remove from heat and dice into cubes, then set aside. In large bowl, add salad green, grilled vegtables, and the remainder of your wet and dry ingredients to the bowl. Lightly toss and serve immediately.
