Ingredients

Mix in saucepan:

1 1/2 cups Marsala or Madeira

1 1/2 cups water

chopped celery, bay leaf, black pepper

-boil down until reduced to half

Mix in a jar:

1 cup water

1 cup Marsala or Madeira

3 or 4 Tablespoons flour

Preparation

After turkey is cooked, remove from its pan. Skim fat off remaining juices. Add giblets and cook. Add mixture from saucepan and cook more. Slowly add mixture from jar while whisking continuously. Cook over low heat and whisk until thickened.
