Ingredients

2 onions, sliced thin

2 large garlic cloves

1/4 c. oil

1 eggplant (diced 1" cubes)

2 tomatoes (peeled & diced)

1 green pepper

1 zucchini

1 med. potatoe

1 c. chicken broth

1 tsp salt

1/2 tsp pepper

1/2 c. rice

Preparation

Heal oil, fry onions & garlic. Add other ingredients. Cook 20-25 min.
