Ingredients

4 medium potatoes

8 pieces bacon, diced

1/4 cup chopped onions

1 tbsp flour

1 tbsp sugar

1 1/2 tsp salt

dash pepper

1/3 cup vinegar

1/4 cup water

3 hard cooked sliced eggs

1 tbsp chopped parsley

1/2 tsp celery seed

Preparation

boil potatoes in jacket until tender. put in colander to drain and cool. when cool, peel and slice. (you may leave skin on). set aside. meanwhile, fry bacon. place on paper towel to drain. reduce heat to low. add chopped onions and brown slightly. mix water and vinegar together and pour this into skillet, stirring. add flour, sugar and salt. this will begin to thicken immediately. remove from stove and add potatoes. pour potatoes into a bowl and sprinkle with parsley, celery seed, pepper, sliced eggs, and crumbled bacon.
