Ingredients
3 eggs, beaten
1/2 cup sugar
6 tablespoons butter
4 ounces semi-sweet chocolate
4 teaspoons fresh lemon juice
1 teaspoon vanilla
1 1/3 cups sweetened flaked coconut
¾ cup walnut or pecan pieces
Pinch salt
1 9-inch-diameter purchased chocolate cookie or graham cracker crumb crust
Preparation
Preheat oven to 350°.
On the stovetop or in the microwave, melt the butter and chocolate together. Add the sugar, lemon juice, vanilla, and salt; stir to combine. Add the eggs and mix well. Stir in the coconut; pour into the pie shell. Sprinkle the top with the nuts. Bake for 40 to 45 minutes until center is set and the top is beginning to brown. Let cool before serving.
