Ingredients

1-1/4 cup finely chopped onions

1/4 cup salted butter

1/4 cup flour

1 tsp salt

1/2 tsp pepper

3/4 cup whole milk

2 lbs. fresh green beans

3/4 cup light sour cream

1/2 lb. shredded four cheese Mexican

1 cup “cheddar” fried canned onion rings

Preparation

Steam green beans util bright green and still crisp then set aside. Saute onions in melted butter, salt,and pepper in a medium sauce pan under medium low heat till onions are softened and translucent. Add flour slowly while stirring to form a blond roux then add milk and continue cooking until thick and bubbly and remove from heat. Stir sour cream in roux add green beans and mix thoroughly Spread 1/3 of green beans in baking dish and sprinkle with 1/3 shredded cheese then repeat layers. Bake at 400F. for 20 minutes minutes then top with onion rings and continue baking for 10 additional minutes.
