Ingredients
6 slices bacon…diced
3 medium onions chopped
2 cups rice (uncooked)
3 cups chicken broth
5 medium sized ripe tomatoes, chopped
2 teaspoons Worcestershire
1 tsp ground nutmeg
1 bay leaf
salt and pepper
1/2 teaspoon cayenne
1/2 teaspoon cumin
1 1/2 lbs large shrimp shelled
Preparation
Fry bacon and drain on towels Add olive oil and saute onions, 3 minutes till soft Add rice and stir Add all ingredients but shrimp & bacon Cover and simmer 30 minutes Add Shrimp and Bacon Cook about 8 minutes more Fluff with fork and serve.
