1/3 cup smoked bacon (small diced)

1/2 tablespoon garlic (minced)

1/2 cup scallions (chopped)

1 1/2 cups Georgia white shrimp (peeled & deveined), 21-25

1/2 cup white wine

2 tablespoons lemon juice

3 tablespoons tomato puree

4 ounces salted butter

1/2 teaspoon Tabasco

1 teaspoon salt

1/2 teaspoon black pepper

Preparation

DIRECTIONS In a sauté pan add bacon and render bacon until crispy. Add garlic, scallions and shrimp and sauté for 3 to 4 minutes. Deglaze pan with white wine, then add tomato puree, lemon juice, butter, Tabasco, salt and pepper, stirring continuously. Adjust seasoning and pour over grits
