Ingredients

1 eggplant -sliced 3/8" thick

1 lb ground beef

5 potatoes -sliced 1/8" thick

1 can stewed tomatoes, blenderized

4 garlic cloves, browned

2 tsp oregano

black pepper

dried sweet peppers, if available

minced onion

salt

Preparation

Salt each piece of eggplant.

Heat olive oil in skillet. Add eggplant, then place iron press on the eggplant.

Layer ingredients (eggplant, ground meat and potatoes)

Sprinkle top w/paprika & red pepper flakes

Cover & bake 1 hr @ 375F
