Ingredients
4 lb boneless, skinless chicken breasts, cubed
1 green pepper
1 red pepper
1 onion
1/2 c chopped green onions
about 2 c oil for frying
Marinade
4 tbsp sherry
1 tsp salt
1 egg
4 tbsp corn starch
Sauce
2 tbsp red pepper sauce
1/4 c sugar
4 tbsp vinegar (white rice)
2 tsp sesame oil
4 tsp corn starch
1/4 c water
4 tbsp soy sauce
2 tsp chopped ginger
Preparation
Mix marinade ingredients in a bowl and mainate chicken for 1/2 to 1 hour.
Mix sauce ingredients and set aside. Cut peppers and onion.
Fry marinated chicken chunks in hot oil until golden brown. Drain chicken and set aside.
Add sauce to pan and stir fry until mixture thickens. Add chicken and veggies and stir fry until heated through – about 1 minute.
