Ingredients

4 egg yolks

1 cup powdered sugar

2 cups milk

1 cup heavy cream

Preparation

Whisk the egg yolks and powdered sugar in a bowl until pale and creamy.

Add whatever flavoring you want to the cream and milk mixture and bring to a boil, then set aside to cool for 10 minutes. Stir the milk and cream into the egg mixture.

Cook until the mixture is thick enough to coat the back of a spoon, making sure it never comes to a boil. Remove from heat and leave until completely cold.

Transfer the mixture to a large bowl and place in the freezer. Whisk once every three hours for nine hours.
