Ingredients

6 Tbs olive oil

2 Tbs red wine vinegar

3 garlic cloves, minced

1 Tbs paprika (smoked)

salt, pepper

3 tomatoes, seeded, chopped

1 cucumber, peeled, chopped

Olives

Red pepper, chopped

Yellow pepper, chopped

1/2 cup chopped red onion

Parsley

Preparation

Whisk oil, vinegar, garlic, paprika, salt and pepper in large bowl. Add remaining ingredients and toss to coat.

Best made 1 day ahead. Chickpeas or beans can be added.

Serve with toasted bread.
