Ingredients
1 gourmet cucumber (usually sold wrapped in plastic) - seeded but not peeled
2 red bell peppers - cored and seeded
4 - 5 tomatoes
1 red onion
2 celery stalks
3 large cloves of garlic, minced
2 cups tomato juice
1/4 cup white wine vinegar
1/4 cup good olive oil
juice from 1 lime
salt and pepper to taste
Preparation
Roughly chop the cucumbers, bell peppers, tomatoes, red onion and celery. Chop each vegetable separately into a food processor - pulse until it is chopped to a consistency that you prefer.
After each vegetable is processed, combine them in a large bowl; add garlic, tomato juice, vinegar, olive oil, salt, pepper and lime juice. Mix well and chill before serving. Preferable overnight.
Serve with a garnish of croutons or crostini and maybe a dollop of sour cream
