Ingredients
8 cups spicy V-8 3 tablespoons salad or olive oil
1 teaspoon salt
1 teasoon sugar
1 medium cucumber, chopped fine
1 medium to large onion, chopped fine
1 green pepper, chopped fine
2 cloves garlic, minced
2 tablespoons finely chopped parsley
1/4 teaspoon pepper
1 large tomato, chopped fine
Preparation
Combine all ingredients in large bowl. Mix well. Cover and refrigerate overnight before serving. Garnish with croutons, diced avocado or choice of onions or cucumber. Gazpacho is better if made at least one day in advance; keeps well for several days in refrigerator.
