Ingredients

3 medium size tomatoes (best if peeled)

4 stalks celery (3/4 - 1 cup)

1 small bunch green onion (1/2 cup)

1 seeded cucumber (1&1/2 cups)

1 medium size green pepper (1 cup)

3 1/2 C. spicy tomato juice

4Tbsp red wine vinegar

2 Tbsp olive oil

2 tsp. salt

3/4 tsp pepper

Preparation

Chop all veggies in smaller pieces and toss into food processor. Pulse until evenly minced. Pour into a sealable plastic storage container, add tomato juice, red wine vinegar, olive oil, salt and pepper. Stir. Refrigerate over night. Serve cold as snack or as a soup side dish.
