Ingredients
1/2 cup butter, margarine, or shortening
1/2 cup light brown sugar
1/2 cup neutral oil, such as canola
2 eggs or 1/2 cup egg substitute
1 tsp vanilla
2 cups whole wheat flour
1 cup rolled oats
1/4 tsp salt
1 tsp baking soda
1 cup chocolate chips
1 cup dried cranberries
1 cup chopped nuts
Preparation
Preheat oven to 350 degrees
Cream fat and sugar until light. Add oil, then eggs, then vanilla, beating in each ingredient. Set aside.
Combine flour, oats, salt and soda. Add to wet ingredients in thirds. Fold in chips, cranberries and nuts.
Using a teaspoon, place on ungreased cookie sheet. Bake 12 minutes. Let rest on sheet on minute, cool on rack.
