Ingredients
140g sugar
140g dark chocolate
140g butter
5 egg yolks
7 egg whites
Preparation
over a bain marie melt the chocolate, butter and 80g of sugar. In the meantime beat the egg whites with the remaining sugar (60g) until fluffy and stiff.
once the chocolate mix is fully melted, stir it around to allow all the ingredients to combine and allow it to cool for a few minutes. gradually add the egg yolks under constant stirring so as to avoid curdling. finally fold the fluffy egg whites in carefully. be sure to Fold them in so as not to let the air out of the mixture. Pour half of the mixture into a greased pan and bake at approximately 200 degrees Celsius, for 20 minutes, after having removed it from the oven, spread the remaining mixture on as a topping.
