Ingredients
1 lb. meaty mushrooms (white, shiitake, or cremini), sliced thinly
4 slices oat nut bread
2 cloves garlic, minced
1 bunch scallions, minced
1/2 white onion or 1 shallot, minced
1/2 teaspoon dried sage
2 slices swiss cheese
1/2 tbsp butter or 1 tbsp vegetable oil
Preparation
in a large saute pan heat oil or melt butter over medium-high heat. saute garlic until fragrant and then add onions and scallions and saute until soft. put bread into toaster. place mushrooms into saute pan and season with kosher salt and fresh ground pepper. saute for 2 mins, until they begin to soften. add dried sage. once bread is a crispy brown, remove from toaster and place one slice on each of two plates. once mushrooms are cooked down and have released a lot of liquid (about 8 mins, total) scoop half of mixture onto each slice of bread. it should look like there is too much for the bread to hold. top with swiss cheese slices, then with last two slices of bread. cut diagonally, and serve.
