Ingredients
8 Chicken thighs or 4 Breast
8TBS Butter
4 Garlic Cloves (chopped)
2C Bread Crumbs (fresh)
1C Parmesan Cheese (grated)
Salt and pepper to taste
Preparation
Pre-heat oven to 350 degrees
Season chicken with salt and pepper.
Melt butter with the garlic and pour into shallow bowl.
Mix the bread crumbs with the cheese, and dip the chicke pieces, one at a time, into the garlic butter, coting well on all sides. THen dip into the bread crumb mixture, patting them on so the coating is thick.
Place the chicken pieces in a shallow roasting pan, skin side up and pat on any remaing bread crumb mixture. Drizzle any remaining garlic butter over the chicken pieces.
Bake chicken for 1 hour or until crisp & golden brown, basting several times with the pan juices.
Serve hot
