Ingredients

1 15 Oz. Can black beans

6 Cloves garlic, crushed

1 TBSP fresh Cilantro, chopped

or 1 tsp Cilantro condiment)

1 Bell pepper, cut in rings

1 Vidalia onion, cut in rings

2 Small zucchini, thinly sliced

8 Oz. fresh mushrooms, sliced

1 Can pitted black olives

4 Cups Shredded Italian cheeses

(Asiago, parmesian, romano,

mozarella)

4 10" pita bread

Preparation

Preheat oven to 425 degrees F. Drain beans and reserve juice. In a blender add black beans, garlic and cilantro, blending until smoothe, adding bean juice as needed for a thick sauce. Spoon Black Bean sauce on top of four 10" pitas, spreading to edges. Spread 1 C shredded cheeses on top of each pita and add sliced vegetables. Place pitas on cookie sheet and bake on middle rack of oven for 8-10 mins. or until cheese melts and bubbles. Remove pizza from oven, slice and serve.
