Ingredients
Pork butt or shoulder roast (preferably bone-in)
Two or three cloves of garlic
Preparation
Heat oven to 350.
Heat a small amount of vegetable oil in a heavy roasting pan with a tight fitting lid. Do this on the stove.
Peel garlic and cut into slivers.
Cut slashes in the roast every couple of inches. In each slash, but a sliver of garlic.
Season the roast well. I use a mix of salt, black and red pepper and garlic powder.
Sear each side of the pork roast until well browned.
Put on lid and put in oven. Cook for 3 or 4 hours. It will be ready when the meat starts to fall off the bone. Check periodically to make sure that there is a small amount of liquid at the bottom of the pot.
