Ingredients

1 lb fresh asperagus spears

1 lemon

1/3 cup pitted kalamata olives

3 boneless, skinless chicken breasts (1.75lb)

1/2 cup fresh garlic cloves

5-6 whole thyme sprigs

1/2 cup extra virgin olive oil

1 tsp greek seasoning, divided

8oz classic hummus

4 pita breads

Preparation

preheat over to 400 cut asparagus into 2" pieces, removing tough root end cut lemon into thin slices slice olives place chicken in 2qt baking dish, add garlic and thyme sprigs around chicken pour oil over chicken sprinkle with 1/2 tsp greek seasoning arrange lemon slices on top of chicken cover and bake 30-40 min or until 165 let stand 5 min before slicing

preheat lg saute pan on med-high 2-3 min transfer to Tbs garlic seasoned oil from chicken pan add asparagus and 1/2 tsp greek seasoning cook and stir 4-5 min until tender

spread hummus over pita slice chicken and arrange over hummus sprinkled olives and roasted garlic over chicken fold and serve with asparagus

cooked lemon slices will be very tender and can be served with the chicken if desired
