Ingredients
5 T. EVOO
3 T. fresh lemon juice
8 c. arugula
1 lb. plum tomatoes
4 stalks hearts of palm sliced
2 med. avocados sliced
1 2 oz. wedge asiago
1/2 c. pine nuts - toasted
Preparation
Combine vegetables; toss with dressing. Shave cheese into strips with vegetable peeler. Sprinkle with pine nuts.
