Ingredients
1 c. thinly sliced potato, unpeeled
1 c. chopped green onions
1 T. butter
2 c. diced cucumber
2 c. shredded butter lettuce
3 c. chicken broth
1 t. dill weed
8 oz. plain yogurt
Salt and pepper to taste
Sliced radishes for garnish
Preparation
Cook potato and green onions in butter till onions are limp. Add cucumber, lettuce, chicken broth and dill. Bring to a simmer, and simmer gently 15 min., covered. Stir in yogurt and whiz in blender in portions till done. Add salt and pepper to taste. Serve hot or chilled, garnished with radishes.
