Ingredients
8 oz rotini pasta cooked
3 tbsp lemon jiuce
1 tsp lemon peel grated
2/3 c light mayonnaise
1/3 c milk
1/2 tsp salt
1/2 tsp pepper
1 c frozen peas
5 radishes cut into 1/2 in chunks
1 carrott shredded
1/2 yellow pepper cut into 1/2 inch pieces
1/4 c chopped fresh chives
1 small zucchini cut into 1/2 inch chunks
Preparation
Heat covered saucepan of salted water to boiling, add rotini paste and cook. Transfer to serving bowl and add light mayo, mil, salt and pepper. With whisk, stir until smooth. Drain pasta, rinse with cold water, drain. Add peas, radishes, zucchini, carrot, pepper and chives to may mixtures and toss.
