Ingredients

2 Tbsp. Olive oil

4 potatoes sliced

2 carrots, cut in bite size pieces

1 whole onion, red or yellow, cut in bite size pieces

1 yellow squash, sliced

1 med zucchini, sliced

Salt & Pepper to taste

Preparation

Heat oil in electric skillet, set on high to heat. Add vegetables and turn down heat to medium. Cover, and cook until carrots become tender. Stirring occasionally.

This can be served with your choice of meats or served alone as a meal.
