Ingredients
1/4 medium cauliflower, diced
1/4 onion, diced
1/4 pepper, diced
1 medium zucchini, sliced
1/2 can garbanzo beans, chopped
6 ounces blended spinach
3 tablespoons tahini
10-12 cashews
1/2 lemon
Preparation
Get the cauliflower steaming. When it’s almost done, saute onion, pepper and zucchini in spoonful or two of water until soft. Add cauliflower to sauteed veges. Add garbanzos, spinach & tahini just enough to warm up. Sprinkle with cashews & lemon or mix in.
This tasted so good, we didn’t even add spices.
