Ingredients

2 cans chickpeas, rinsed and drained

1/2 c roasted red or ylw peppers

1/4 c sliced kalamata olives

1/3 c sliced cherry tomatoes

chopped parsley, basil, mint, and scallions

minced garlic clive

juice of 1 lemon

olive oil

salt and pepper
