Ingredients
1/2 Cup Butter
2 Eggs
1 1/4 C Brown Sugar
1 1/2 C Flour
1 C Raisins
1/4 t Ginger
1/2 t Salt
1/2 t Nutmeg
1/2 t Cinnamon
4 t Baking Powder
1 C Walnuts - chopped
Preparation
Cream butter, eggs and brown sugar. Stir in persimmon pulp.
In seperate abowl mix all dry ingreients except raisins and walnuts. Combine creamed and dry mixtures. Add raisins and walnuts.
Drop rounded teaspoons cookie batter on greased cookie sheet.
Bake 15 minutes in 400 degree oven.
Remove from cookie sheet and place on cooling rack.
