Ingredients

2 pork tenderloin, about 2 lbs

1 large white onion, finely diced

Sauce

1 small can tomato paste

3/4 cup apple cider vinegar

1/4 cup soy sauce

2T peanut butter

3T black bean sauce

1T minced garlic

1t minced ginger

1T pickled ginger

1T coriander seeds, ground

Preparation

Sweat the onions in a large pot in 2T of butter, do not brown. Combine all ingredients for sauce and whisk together. Place tenderloins in pot on top of onions and pour sauce over meat, ensuring sauce covers meat entirely. Place lid on top and bring to low simmer. Stir so some sauce gets to bottom of pan and onions don’t burn. Keep on low heat for about 2 hours until meat pulls easily with 2 forks. Then remove meat onto cutting board and pull apart. Meanwhile, let sauce reduce somewhat on medium high heat. Then return meat to sauce and let sit overnight.
